Seafood Alfredo with penne pasta and bell peppers

Feb 17th's dinner was very last minute.  Since there isnt much in the fridge, i defrosted some scallops and crab meat and made pasta!

First, i put a pot of water on the stove for the pasta.  Then proceeded to cut the peppers, i used green, red, yellow and orange bell peppers.

Then, added the pasta to the water, also adding season, i used salt, lemon pepper, garlic powder, onion powder, and italian seasoning.

I then added the veggies to the water using a strainer to cook them at least half way so i dont have to stir fry them too long.

When the frying pan was heated, i added my seafoo (scallops and crabmeat). of course they have to be dry before putting into the pan.  then i seasoned them with garlic powder, salt and pepper, and cajun seasoning.

I then took the veggies out, drained them.  drained the pasta too.  then added milk to the pot with the pasta bring it a boil.  added more italian seasoning.

then added the alfredo sauce and mixed the veggies and seafood all together.

There you have it, the finished dish.  garnished with some cilantro and parmasan cheese!

Variations: instead of bell peppers, i have used spinash , or you can use mushrooms, anything you like.

WanChai Ferry Cashew Chicken

Feb 22nd's Dinner was Cashew Chicken, i bought a WanChai Ferry Box Dinner from the grocery store, and i wanted to try it.   i added Brocoli to the dish even though the recipe has no veggie in it, but i love veggies, so i altered it a bit.

First, i cut up the skinless, boneless chicken breast into one inch cubes, while having the brocoli cut up and washed.  The chicken i seasoned it with salt and pepper, garlic powder and onion powder.

Then heat pan with olive oil and pan fry the chicken.

In another pan, added a bit oil, stirred in fresh garlic then added the brocoli and stir fry for a bit, added some water to finish cooking.

When the chicken and brocoli are both done, mixed them together, added some cashews.  keep stirring while adding the sauce that came with the boxed dinner.

After everything is covered with the sauce, voila, there you have it, Cashew chicken with Brocoli on white rice

Variations:  Pork, shrimp, beef..etc.  bell peppers, mushrooms, carrots...etc

Notes:  the sauce is a bit too sweet for me, so u dont have to add the whole package, save some for next time.  instead you can add water, but of course it's gonna be a bit watery, add corn starch water to it so the sauce will thicken.

This dish is high in carbs and sodium and fat. not recommended for dieters. But there are things you can do to make it more healthy.

1.  not use the whole package of sauce (hence, less sodium)

2.  not using the corn starch (hence, less carb)

3.  use less oil in cooking, if u can, you can just boil the ingredients instead of pan frying.

One Shoulder Dress

I have made dresses before, but they were for Halloween, so this one is my first REAL dress that i have ever made by myself.   A single shoulder dress with a very pretty fabric that i picked up at Hancock's on a clearance rack!

I am using McCall's pattern M6118, Tunic A without the bow. Here is a link for the pattern info.

The dress has two layers, one is a layer of dark red fabric, a fabric i used for my Renaniance Fair costume last year, and a flowy patterned fabric that i am sewing onto the front.

Here I was cutting my red fabric with the pattern pinned.

After cutting all the red pieces, i cut the flowy one

Now onto the sewing part.  Here i was sewing the shoulder band, front and back together without using the interfacing (i didnt wanna use interfacing for this dress)

Then I sewed the front and back of the tunic together at shoulder and sides with the flowy front.  I skipped the gathering part.  the pattern says to gather the upper edge, but i wanted to be only folded a few times instead of the gather.

After that, i pinned the shoulder band to the tunic without using interfacing, so here, i did not follow the pattern. i just winged it.

Here i am sewing it together.

This is how it looked, without the bottom hem or the armhole done

Then onto the armhole

Bottom hem

The finished dress

All the while, i was watching my favorite show FRIENDS

Update:  Since i have made that dress, i kept thinking how i didnt like the neckline, so i ripped it all apart and redid it.  Instead of having four layers , i cut that in half and sewed onto the garment with right sides together instead of what the pattern told me to do (sew that neck piece just as a bias tape onto the garment). this way, my neckline is smooth and hugs my body.

The final product
